Chef James Tanner and ARYZTA Food Solutions Unveil their ‘Inspired by’ Chocolate Dessert
Celebrated chef James Tanner has unveiled an ‘Inspired by’ Chocolate Pavé created in partnership with bakery giant ARYZTA Food Solutions. The new dessert represents months of development work between the chef and the brand and is set to be rolled out to the UK market this summer following stints as a guest special dessert option at both his gastro pub, The Kentish Hare and restaurant, The Barbican Kitchen.

Perfect for pubs, restaurants, hotels and B&I catering, where consistency and quality are key requirements, the ‘Inspired by’ Chocolate Pavé is a rich chocolate brownie base, topped with a milk chocolate praline feuilletine and chocolate truffle, decorated with chocolate mirror glaze and cacao nibs.

James, in his capacity as Chef Ambassador for ARYZTA Food Solutions, worked closely with the company’s brigade of development chefs to take the Patisserie product from concept to creation. He has long had an affinity with chocolate and chose high-quality 70% Ecuadorian Origin – a fruity character combined with notes of rum, whisky and tobacco from makers of the finest Belgian chocolate, Callebaut – as the perfect foil.   

The ‘Inspired by’ Chocolate Pavé will be available to UK foodservice as a frozen finished item, but, says James, the dessert really comes into its own when ‘pimped and paired’ with other flavours such as gingerbread, berries, coffee, passion fruit, citrus, rum, whisky, nuts, Sichuan pepper and mandarin.

He said: “I’m so proud to finally bring this product to market. The Pavé has been created to work perfectly well as a finished product, but I wouldn’t be a chef if I thought it couldn’t benefit from a number of innovative serves and pairings. Kitchens are businesses and so offering them something that is already premium – created using the finest ingredients – that can be further upsold with the addition of a few simple but well thought out elements, is key. This new product definitely meets that criteria and I can’t wait for other chefs to try it.”
